So I relied on my trusty Crock Pot to get me through. Here's what I made:
2 packages of free-range hormone-free chicken breasts
1 dozen "new" (little red) potatoes
1/2 red onion (I dropped half while cutting it up)
1-pound baby carrots (plus the last of the carrots from my bucket garden)
2 small green zucchini
1 yellow bell pepper
3 stalks of celery
1 package of fresh herbs (thyme, rosemary, and sage)
Cooked for 8 hours on low in the crock pot.
