Our harvest for today included three Sweet Banana peppers and four cherry tomatoes. Little #5 picked them all for me. He loves to help.
Ginger Fennel Hamburger Dinner
1/2 a gallon bag of ground hamburger
12 red potatoes (quartered)
1 Vidalia onion (roughly chopped)
3 sweet banana peppers (de-seeded and chopped)
3 handfuls of baby carrots (cut in half)
2 small cans of organic tomato paste
~ 1 Tbsp ground ginger
~ 1 Tbsp ground fennel
~ 1 tsp sea salt
2 cans of green beans
Add everything but the beans to the crockpot. Set to Low for five hours. When there's only an hour or two left, add the green beans. Stir a couple times to break up the hamburger as it cooks.
A note, for a less greasy version, cook the hamburger separately and discard the grease! We just used a slotted spoon for serving and left the grease behind as much as possible. Some of the potatoes were slightly firm still. In a perfect world, I'd have cooked this 6-8 hours on low, but I got a late start and needed it done so kids could eat at a reasonable time.
