Amanda's Pork Chop Marinade
2-3 pork chops
1/4 cup olive oil (I used a Mediterranean blend from Costco)
3 Tablespoons brown sugar
2 Tablespoons lemon juice
2 Tablespoons honey mustard
1 teaspoon garlic powder
2 teaspoons dried thyme
1 teaspoon onion powder
1 teaspoon Worcestershire sauce
1 teaspoon red wine vinegar
1 teaspoon molasses bacon seasoning
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Step 1: Put pork chops in a plastic bag, set aside.
Step 2: Mix all other ingredients in a mixing bowl until thoroughly combined.
Step 3: Pour the marinade into the bag with the pork chops. Push out as much air as you can and seal the bag.
Step 4: Put the marinading bag into the refrigerator for 4-8 hours.
Step 5: Prepare your pork chops in whatever preparation you prefer. We grilled ours.
**A note here, we quadrupled this recipe (except the onion powder, which we were one teaspoon short of) and used it to marinade 12 small pork chops. We had mashed sweet potatoes as a side dish and there were no leftovers. I would like to try this marinade on a pork roast and see how it turns out in the slow cooker.
The original recipe I found called for spicy brown mustard, parsley, white wine vinegar, and mesquite seasoning. I did not have these on hand, so we used what we had. If you'd like to try the original recipe it can be found here.
