It wasn't until after I pureed the pumpkin that I realized I didn't have any containers to put it in for the night, so I figured I'd just start the soup in the evening... A good stew is always better when it's had time to bubble and mix flavors, right?
Well, pumpkin soup is not stew. Pumpkin soup needs to be served fresh... not heated all night and all day... It looked good, it smelled good, but it tasted awful. I regretted doing anything to it at all. The baked pumpkin had been delicious. I'm so glad that I only wasted 1/3 of the pumpkin. The rest is in the fridge waiting for me to bake it - and then I will eat it just as is, straight out of the oven. I will try pumpkin soup again in the future, but next time I won't leave it in the crock pot over night!
